Kerala Beef Recipes

1. Kerala Beef Fry

The crown jewel of Kerala cuisine—deeply spiced, slow-cooked, and finished with pan-roasted coconut flakes and fresh curry leaves.

Ingredients

  • 1 kg Beef, cut into small bite-sized cubes

  • 1 cup Shallots (Kunjulli), sliced

  • 1 large Red Onion, thinly sliced

  • 1 tbsp Ginger-Garlic paste

  • 1/2 cup Thinly sliced coconut pieces (Thenga Kothu)

  • 3 Green chillies, slit lengthways

  • 3 sprigs Curry leaves

  • 3 tbsp Coconut oil

  • For Marination:

    • 1.5 tbsp Kashmiri chilli powder

    • 1/2 tbsp Turmeric powder

    • 2 tbsp Coriander powder

    • 1.5 tbsp Kerala Garam Masala

    • 1 tbsp Crushed black pepper

    • 1 tbsp Vinegar or lemon juice

    • 1 tsp Salt

Method

  1. Marinate: In a bowl, toss the beef cubes with all marination ingredients and 1 sprig of curry leaves. Let it rest for 30 minutes.

  2. Pressure Cook: Transfer the marinated beef into a pressure cooker with 1/4 cup of water. Cook on medium heat for 4–5 whistles (or until tender). Allow natural pressure release.

  3. Sauté Aromatics: Heat coconut oil in a heavy-bottomed cast-iron pan or traditional Uruli. Add the coconut pieces (Thenga Kothu) and fry until golden brown. Remove half for garnish.

  4. Build the Base: In the same oil, add crushed green chillies, sliced shallots, onions, and curry leaves. Sauté until deep golden brown.

  5. Slow Roast (Varattiyathu): Pour in the cooked beef along with its rich stock juices. Reduce heat to medium-low and simmer continuously, stirring occasionally, until all liquid evaporates and the spices coat the beef darkly.

  6. Finish: Sprinkle an extra 1/2 tsp of crushed black pepper, toss in remaining fried coconut slices, and garnish with fresh curry leaves before serving.

2. Kerala Beef Curry (Nadan Beef Stew/Gravy)

Ingredients

  • 1 kg Beef (with bone for optimal flavor), cut into medium cubes

    • 1 tbsp Whole black peppercorns, crushed

    • 1 tbsp Kerala Garam Masala

    • Whole spices: 2 cinnamon sticks, 4 cloves, 3 cardamom pods, 1 star anise

    • Salt to taste

Method

  1. Sear & Cook: Heat 1 tbsp coconut oil in a cooker. Add whole spices and sauté until fragrant. Add ginger, garlic, shallots, and tomatoes until soft.

  2. Spice Base: Lower heat; add coriander, chilli, turmeric, and garam masala powders. Cook until raw aromas disappear.

  3. Simmer Beef: Add beef, salt, and thin coconut milk. Pressure cook for 4–5 whistles until meat is tender.

  4. Thicken: Open the cooker, place over low flame, and pour in the thick coconut milk. Simmer gently without boiling for 3 minutes to avoid curdling.

  5. Temper (Tadka): In a small pan, heat 1 tbsp coconut oil, fry 4–5 sliced shallots and curry leaves until golden, and pour over the curry immediately. Cover for 5 minutes before serving.

3. Beef Roast (Kerala Syro-Malabar Style)

A thick, semi-dry gravy dish popular at traditional Syrian Christian wedding feeds and celebrations.

    • Salt to taste

Method

  1. Marinate: Combine beef with half the spice mix, garlic, ginger, salt, and 1 tbsp vinegar. Rest for 20 minutes.

  2. Initial Cook: Pressure cook the beef with 3 tbsp water for 4 whistles.

  3. Thick Masala Base: In a wide pan, heat coconut oil. Add crushed fennel seeds, crushed shallots, and sliced onions. Cook patiently on medium heat until caramel-brown.

  4. Combine: Add remaining spice mix and tomatoes. Cook until oil separates.

  5. Reduction: Pour in cooked beef and its stock. Stir constantly on medium-high flame until the sauce reduces to a thick, velvety coating (Kurumukku) adhering to each beef piece.

Method

  1. Marinate & Cook: Mix beef with half the ginger-garlic, turmeric, salt, and 1 tbsp pepper. Pressure cook without added water (the meat releases its own juices) for 4 whistles.

  2. Sauté aromatics: Heat coconut oil in a traditional iron skillet. Fry coconut strips until golden. Add crushed shallots, crushed ginger-garlic, green chillies, and curry leaves. Sauté until translucent and aromatic.

  3. Add Spices: Stir in coriander, fennel, chilli flakes, and remaining pepper powder.

  4. Dry Roast: Add cooked beef with minimal stock. Keep fire on low to medium. Roast continuously for 20–25 minutes, stirring frequently so the beef darkens evenly without burning.

  5. Finish: When the meat turns dark brown with crisp edges, adjust pepper and garnish with fresh curry leaves.

5.Beef Olathiyathu with Tapioca (Kappa Beef / Ellum Kappayum)

Ingredients

  • 750g Tapioca (Kappa), peeled and diced small

  • 500g Beef (preferably with bone and rib marrow chunks)

  • For Tapioca Mash:

    • 1 cup Grated coconut

    • 1 tsp Cumin seeds

    • 4 Shallots

    • 3 Green chillies

    • 1/2 tsp Turmeric powder

  • For Beef Gravy:

    • 1 cup Sliced onions

    • 1 tbsp Ginger-garlic paste

    • 1 tbsp Meat masala

    • 1 tbsp Chilli powder

    • 1 tbsp Coriander powder

    • 1 tsp Garam masala

    • 2 tbsp Coconut oil

    • Curry leaves and salt to taste

Method

  1. Cook Tapioca: Boil tapioca in plenty of water with salt and turmeric until tender. Drain completely.

  2. Prepare Coconut Paste: Coarsely grind grated coconut, cumin, shallots, green chillies, and turmeric with minimal water.

  3. Mash: Add the ground paste to warm drained tapioca and mash thoroughly using a wooden spoon. Set aside.

  4. Prepare Beef: Cook beef with onions, ginger-garlic, meat masala, coriander, chilli powder, and salt in a pressure cooker until tender (5–6 whistles).

  5. Combine & Tempered Finish: Mix the cooked beef gravy directly into the mashed tapioca over low heat so flavors meld. In a separate pan, temper shallots and curry leaves in coconut oil and pour over the dish.

6. Kerala Beef Mappas

A milder, velvety coconut cream gravy infused with coriander and whole spices—ideal for formal occasions.

Method

  1. Sauté Base: In a pot, heat coconut oil. Splutter whole spices, then add ginger, garlic, green chillies, onions, and shallots. Sauté until soft and translucent (do not brown heavily).

  2. Spices: Add coriander powder, chilli powder, and turmeric. Stir on low flame until raw aroma dissipates.

  3. Cook Meat: Add beef cubes, salt, tomatoes, and thin coconut milk. Cover and simmer (or pressure cook for 4 whistles) until beef is soft.

  4. Creamy Finish: Reduce heat to low, stir in the thick coconut milk and garam masala. Warm gently for 2 minutes without letting it come to a rolling boil. Garnish with tempered mustard seeds, shallots, and curry leaves.

Method

  1. Cook & Marinate: Pressure cook beef strips with turmeric, half the vinegar, pepper, and salt for 3 whistles. Drain excess stock (reserve for soup or gravy).

  2. Coat: Toss cooked beef strips with red chilli powder, soy sauce, and cornstarch.

  3. Crisp Fry: Heat coconut oil in a wok. Deep fry or pan fry the beef strips until crisp on the outside yet tender inside. Drain on paper towels.

  4. Toss: In a pan, heat 1 tbsp oil. Flash-fry chopped garlic, ginger, sliced green chillies, onions, and capsicum on high heat for 1–2 minutes until fragrant yet crunchy.
